OUTLOOK Signatures and Stationery
I have tried to set up my Personal Stationery (Reply, Forward & New Messages) with the Imprint MT Shadow font.

The dialog box accepts the changes (font, color, size), yet when I try to Compose or Reply, Outlook defaults to Arial Black.

Any ideas of what to do?

I don't use Outlook or 2007 (yet) but from what I have read, MS stopped using the settings from IE for HTML formatting to those in Word. So, essentially, I suspect you can change the formatting for one message, but to make it "stay," you will have to alter the defaults in Word.
Smart? No. But you could copy your normal template for Word (Normal.dotm) first and rename it to something like NormalW.dotm, then make your changes to Normal.dotm, and finally tell Word to use the unchanged template (NormalW.dotm) as the template for Word documents.
I sure can't guarantee this will work, but it is what comes to mind....

good try
strange. i opened word, opened a file, changed the font to imprint mt shadow, saved the file.

opened outlook, Replied, and it gave me imprint mt shadow -cool.

below my email jpg header, i typed again, but this time, it was arial.

seems i need to work on that 'normal.dot' file you mentioned...

will keep trying later today. such a hassle to have to change the default arial bold font everytime...

I have no good idea why MS changed from having IE be the default HTML reader to Word - IE is designed for it, Word isn't, although it can do a passable job. But the HTML Word generates is very messy - not good coding at all.
