Deleating e-mails on my iPhone

When I had a Blackberry it would let me delete e-mails "on handheld",
"on server" or "both". I want my e-mail to leave my server if I delete on iPhone. Right now if I dont open my outlook on my laptop for days, all e-mails that I have viewed and deleted on my iPhone will still be in my "outlook". Lots of double work.
