what happens if i change the PROCESSOR_ARCHITECTURE from x86 to x64?

With no other information it's hard to say. For Windows, you have to install the 64 bit version if you expect to have 64 bit processing, I suspect for other O/S versions like Linux it would be the same thing. It's not as simple as changing a parameter if that's what you're asking.
