I use capers in chicken fricassee. I put it in the gravy. It gives the gravy a nice taste.

Garlic Cheese Chicken Roll-ups

Alfredo Mostaccioli

I have a question for you guys--how exactly is traditional "alfredo" made? I make mine using heavy cream, some white wine, basil, mushrooms, grated parmesan (sometimes), and a smidge of butter (sometimes I omit the butter though--it's more for if I'm short on time because it helps the sauce thicken a bit faster). If that wouldn't be considered alfredo, what would it be? I don't much care for the jarred kind of alfredo, and most restaurant-style I don't care for either (too thick, tastes like some sort of flour paste, *blech*), but mine comes out smooth, and amazing every time...doesn't reheat well though--tastes fine, but looks separated and kinda yucky.

Hi Farmgirl22,

I use a half-pint of light cream in a small pan, and a (about 5oz) triangle of grated parmesan on low heat, and stir in the cheese by handfuls over about 5-min before the pasta is finished boiling for 10 minutes. No basil, mushrooms or wine.

Original Irish Cream

"Irish whiskey mixed with cream and sugar with hints of coffee, chocolate,
vanilla, and almond. Will keep for 2 months if refrigerated. "


PREP TIME 15 Min
READY IN 15 Min
Original recipe yield 4 cups

INGREDIENTS
1 cup heavy cream
1 (14 ounce) can sweetened condensed milk
1 2/3 cups Irish whiskey
1 teaspoon instant coffee granules
2 tablespoons chocolate syrup
1 teaspoon vanilla extract
1 teaspoon almond extract

DIRECTIONS
In a blender, combine heavy cream, sweetened condensed milk, Irish whiskey,
instant coffee, chocolate syrup, vanilla extract, and almond extract. Blend
on high for 20 to 30 seconds. Store in a tightly sealed container in the
refrigerator. Shake well before serving.

FUDGE SUNDAE DESSERT

INGREDIENTS:

1/2 cup Karo syrup
4 tablespoons brown sugar
6 tablespoons margarine
5 cups Rice Krispies
1/2 cup peanut butter
1/2 cup fudge sauce or chocolate sauce
6 tablespoons Karo syrup
2 quarts ice cream


DIRECTIONS:

Mix first 3 ingredients and cook over medium heat until it boils. Remove
from heat and add Rice Krispies until well coated. Press into 9x13 baking
dish. Stir together peanut butter, fudge sauce and 6 tablespoons Karo syrup.
Pour half on Rice Krispies and freeze until firm. Spoon ice cream over
misture and drizzle remaining peanut butter mixture over top.

Making Your Own Flavored Oils.

This is a great method for making small amounts of flavored oils for use at the last minute as embellishments for soups, vegetables, and simple fish dishes. It works best with soft, fresh, fragrant ingredients like tender herbs, garlic, or grated citrus zest.

Olive marinade for tuna

1 jar of green olives (small), pitted, red peppers stuffed inside are OK, if you like them
1 anaheim chile, ...or chile of your choice, I like the anaheim for this...
1 clove garlic
2 tablespoons + of soy sauce (approx.)
1 tablespoon + of olive oil (approx.)
1 tablespoon + lime juice (apporx.)

2 tuna steaks

remove the seeds from the chili (unless you like it really hot!)
don't touch your eyes, nose, etc. until you have washed your hands well with soap after handling the seeds

drain the olives, you can use the juice from the olive jar if you like, I don't

chop the olives, chili, garlic in a food processor

add in the olive oil and the soy sauce to the food processor until it is like a slightly runny paste.

heat on the grill in a pan, or on the stove, spread the paste out... the paste should thin out a bit.. add more soy sauce, lime juice, or olive oil as needed

grill the tuna steaks to taste

pour the olive marinade over the tuna, and enjoy!

Quick and easy Cream Biscuits
Makes Eight 2 1/2-Inch Biscuits. Published May 1, 2000.

These biscuits come together in a flash and require no special equipment.
Ingredients
2 cups unbleached all-purpose flour , plus extra for the counter
2 teaspoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon table salt
1 1/2 cups heavy cream

Instructions

1. Adjust oven rack to upper-middle position and heat oven to 450 degrees. Line baking sheet with parchment paper.

2. Whisk together flour, sugar, baking powder, and salt in medium bowl. Stir in the cream with a wooden spoon until dough forms, about 30 seconds. Turn the dough out onto a lightly floured counter and gather into a ball. Knead the dough briefly until smooth, about 30 seconds.

3. Shape the dough into a 3/4-inch-thick circle. Following illustrations below, cut biscuits into rounds or wedges. Place rounds or wedges on parchment-lined baking sheet. (The baking sheet can be wrapped in plastic wrap and refrigerated for up to 2 hours.) Bake until golden brown, about 15 minutes, rotating baking sheet halfway through baking.

****Be sure to be a bit rough with these, they will rise better if you do.****

This is a Betty Crocker Microwave cook-off winner

Apple Betty Pie

1/2 cup butter or margarine
1/4 cup sugar
2 cups graham cracker crumbs

place butter in a large bowl. Melt in microwave about 1 minute--may be less. Add sugar and crumbs and mix well. Press half the mixture firmly and evenly into a 9 inch glass pie plate.

5 cups thinly sliced apples--about 4 apples
1/2 cup sugar
1 teaspoon cinnamon

Apple slices should be 1/8 to 1/4 inch thick. Place slices in crumb lined pie plate and sprinkle with the sugar mixed with the cinnamon.
Cover with the rest of the crumb mixture. Press crumbs firmly around the edge to prevent boil over
Cook 9 to 10 minutes. Let stand 5 minutes before serving.
good hot or cold but I like it warm with ice cream. You can add a few chopped nuts to the top crust if you want.
This is an old recipe. I got it when microwaves had a maximum wattage of 700 and few had turntables so you had to turn it half way.
Mine is 1200 so I usually cook it on power level 8--its cooked when the apples are tender

Thanks Oil Painter! It sounds yummy, and Apple pie is one of my favorite pies (behind Pumpkin, of course! )

Here's a recipe for CHERRY-ALMOND UPSIDE-DOWN CAKE...I haven't tried it, but I think it sounds fabulous!

Dutch Apple Pie
6 - 8 servings
TOPPING:
2/3 cup sifted flour
1/3 cup firmly packed light brown sugar
1/3 cup butter

FILLING:
2 lbs tart cooking apples
1 tbsp lemon juice
2 tbsp flour
3/4 cup sugar
Dash salt
1 tsp ground cinnamon

Refrigerate pie shell until ready to use.
To make topping, combine flour and brown sugar in a medium bowl. Cut in butter with a pastry blender or two knives until mixture is the consistency of coarse cornmeal. Refrigerate.

To make filling, pare apples and core. Thinly slice into a large bowl. Sprinkle with lemon juice. Combine flour, sugar, salt and cinnamon; mixing well. Toss lightly with apples. Turn filling into pie shell, spreading evenly. Cover with topping.
Place pie in a preheated, 400 degree, oven. Bake 40-45 minutes or until topping is golden brown and apples are tender.
Serve warm or cold
