Teriyaki Marinade

½ cup soy sauce

1 clove garlic, minced

2 tablespoons brown sugar

½ teaspoon ground ginger

2 tablespoons Worcestershire sauce

1 tablespoon lemon juice

Combine all ingredients and mix well.

Red Wine Marinade

1/3 cup red wine vinegar

2 tablespoons vegetable oil

1 tablespoon Dijon-style mustard

2 cloves garlic, minced

¾ teaspoon dried Italian seasoning

¼ teaspoon coarse ground black pepper

Combine all ingredients, stirring until well blended.

This is a GREAT London Broil Marinade!

Lemony Oriental Marinade

¼ cup fresh lemon juice

3 tablespoons chopped green onion

1½ tablespoons reduced-sodium soy sauce

1½ tablespoons vegetable oil

¾ teaspoon grated fresh ginger

¼ teaspoon crushed red pepper pods

Combine all ingredients, stirring until well blended.


Zesty Italian Marinade

2/3 cup prepared Italian dressing

2 tablespoons coarsely chopped fresh cilantro

1 tablespoon chili powder

Combine all ingredients and mix well.

Savory Marinade

¼ cup steak sauce (any kind)

2 tablespoons brown sugar (packed)

2 tablespoons lime juice

¼ teaspoon ground red pepper

Combine all ingredients and mix well.

This is a GREAT Top Round Marinade!

Southwestern Marinade

¼ cup prepared salsa

2 tablespoons chopped cilantro

2 tablespoons fresh lime juice

1 tablespoon vegetable oil

1 clove garlic, minced

¼ teaspoon ground cumin

Combine all ingredients, stirring until well blended.

More Beef Marinade Recipes

Citrus Marinade

½ cup orange juice

¼ cop soy sauce

1 clove garlic, crushed

2 dashed ground clove

Combine all ingredients and mix well.


Barbecue Marinade

½ cup chopped onion

1 ½ tablespoon brown sugar (packed)

1 tablespoon vegetable oil

1 tablespoon prepared horseradish

1 tablespoon water

¼ teaspoon coarse ground pepper

Cook onion and brown sugar in oil in small saucepan over medium heat until onion is tender, about 10 minutes. Add remaining ingredients and continue cooking over medium heat 3 to 4 minutes, stirring occasionally. Remove from heat; cool thoroughly before adding beef.

This is a GREAT London Broil Marinade!

Basic Beef Marinade

2½ cups vinegar

12 whole cloves

2½ cups water

2 or 3 bay leaves

3 onions, sliced

1½ tablespoon salt

1 lemon, sliced

3 tablespoon black pepper

Combine ingredients; let stand at room temperature for 24 hours. Add meat and put in the refrigerator. For mild flavor, leave meat in mixture for 24 hours. Cook as usual.



Venison Marinade

½ cup olive oil
¼ cup lemon juice
½ cup red wine
1 t. salt
1 t. pepper
1 clove minced garlic
½ cup chopped onion
¼ cup chopped parsley

Mix all ingredients and marinate venison for 6 to 8 hours. Grill.



Italian Marinade

½ cup Italian salad dressing

¼ teaspoon salt

¼ cup lemon juice

1/8 teaspoon pepper

1 teaspoon dried oregano

Thoroughly combine all ingredients. Use as a marinade and basting sauce while the meat is cooking. Makes about 2 to 4 cups of marinade. Great for all meats.

Tangy Marinade

1/3 cup soy sauce

2 tablespoons of vinegar

1/3 cup catsup

1 teaspoon thyme

¼ cup salad oil

¼ teaspoon mustard

Combine all ingredients and mix well. Pour over meat to be marinated. Marinate for 24 hours in the refrigerator and cook as usual.

version of
Taco Bell Chicken Fajita!
Seasoning Mix
by Todd Wilbur


A couple years ago Taco Bell and Kraft Foods got together to produce a line of products -- everything from taco kits to salsas and spice mixes -- all stamped with the familiar Taco Bell logo and available in supermarkets across the country. The idea was a winner, and now the Taco Bell line of products is among Kraft's top-sellers (30th place). The clone of this mix, made with a combination of common spices and corn starch, can be kept indefinitely until your brain's fajita-craving neurons begin firing. When you're set to cook, you'll just need some chicken, a bell pepper and an onion, and then you simply follow the same instructions that you find on the package of the real thing.

1 tablespoon corn starch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
3/4 teaspoon crushed chicken bullion cube
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin

1. Combine all of the ingredients in a small bowl.
2. Prepare fajitas using the following ingredients:


4 boneless, skinless chicken breasts (1 to 1 1/4 lb.), cut into thin strips
2 tablespoons oil
1/3 cup water
1 green bell pepper, cut into strips
1 medium onion, sliced

Prepare the fajitas using the same directions found on the package of the original seasoning mix:

"1. COOK and stir chicken in hot oil in a large nonstick skillet 5 minutes on medium-high heat. Add TACO BELL Fajita Seasoning Mix, water, green pepper and onion; cook and stir on medium heat 5 minutes or until chicken is cooked through and the vegetables are tender.
2. PLACE tortillas on microwavable plate. Cover with plastic wrap. Microwave on high 1 minute.
3. SPOON chicken mixture onto each tortilla. Top as desired with TACO BELL salsa. Roll up tortillas."

Red Wine Marinade

This is Low-Sodium

Peppercorn Ranch Dressing

Until we got the bleu cheese dressing right, this was the most popular one. The figures are based on off-the-shelf low sodium mayo, but you can get 0 sodium mayo at www.Healthyheartmarket.Com and that would reduce the sodium content even more. You can crack the peppercorns by putting them in a plastic bag and beating on them with a mallet or rolling pin, so you might want to try this recipe a day when you are feeling a need to release some frustration.

1 c Mayonnaise
1 c Buttermilk
2 t Parsley
1 t Onion Powder
1/4 t Garlic Pepper
1/4 t Dill
1 t Black Peppercorns, Coarsely Cracked



Mix all ingredients together well. Refrigerate overnight before using.

1 tablespoon garlic powder
1 teaspoon basil
1 teaspoon marjoram
