#24 | For all you carrot cake lovers:
Mix in the pan carrot cake
In a 9 x 9 inch square ungreased pan mix together
1 cup flour
1 tsp. cinnamon
1/2 tsp baking powder
1/4 tsp. nutmeg
3/4 cup sugar
1/2 tsp. salt
1/2 tsp. baking soda
mix with a fork until all ingredients are combined well.
In a small bowl beat
2 eggs-------and mix in
1/2 cup of oil or melted margarine
1/4 cup of milk
1/2 tsp. vanilla
mix to blend and add to dry ingredients. beat briskly with a fork until thoroughly blended and then blend in
1 1/2 cups shredded carrots
Bake in preheated 350 degree oven for about 30 minutes or until toothpick inserted in the center comes out clean
Cool on a rack and then ice with your choice of frosting
You can double the recipe and cook in a 9 x 13 pan. When I do this, I mix it in a bowl instead of the pan
