The thread I was reading has been closed but I have found a solution so thought i would share it:

Window Live Mail 2011 (Windows 7)

How to PERMANENTLY change font style and size.

You may follow the steps below to increase the font size of your emails in Windows Live Mail 2011:
1. Open Windows Live Mail.
2. Click Alt + F, O, M.
3. Click on Compose tab> Compose Font, click on Font settings and choose whatever font size you want for your Mail and News, click OK.
4. Click Apply then OK.


I found this solution elsewhere through a contributor named SHAMILA but thought that I should share it.

It works instantly and saves the hassle of manually changing the font style/size every time you send an email.
