I saw this awhile ago. Pretty funny!
Anyway, I think they just made recordings for any action someone might request. I assume it uses keywords. They did a pretty good job of guessing what people might ask the chicken to do (kinda scary, actually!). If you ask it to do something it doesn't understand (hasn't been programmed in), it appears to do some random stuff.

I ran a BBS a few years back, and had installed a program for an "Automated Sysop", which would provide "24/7 help" with the BBS. There was a *.TXT file that contained a list of keywords. Whenever someone typed in a certain word, the program would respond accordingly.
For instance, if someone asked "How do I get to the Games menu?", then the AutoSysop would respond "Press 'G' from the main menu".

I had fun with it, because I had a bunch of "irate" people who would get the auto-sysop (my reason for installing it!), and they would type words like F--- and S--- and the program would (to put it lightly) tell them off.

And of course it would create a log of all the chat sessions.
