I think right now there is about 3 or 4 different Linux Mobile Projects going on right now. Google is part of one of them.

But if you are thinking you can just slap on a Linux mobile operating system onto your mobile phone, I don't think that will fly.

Tablet PCs don't use Windows Mobile. They use either Vista or Windows XP Tablet edition. You can install Linux on a tablet PC, but I'm not sure what Linux offers that's comparable to they stylus-related functionality.

What is the make and model of your Tablet PC?
I would start Google searching to see if anyone else has installed a variant of linux on your make and model tablet pc.

I read one article about Ubuntu running pretty well on some tablet pc's.

Another thing you could do is type www.yahoo.com or www.google.com or another search engine into your browser's address bar. Then, after going to that site, type "Ubuntu tablet pc" (w/o the quotes) into the Search bar. That should give you lots of stuff to read until Squashman can get back to you with a specific link.

This is just one alternative. If it were me I would start with Squashman's suggestion--search for Linux and your particular tablet PC; e.g., search for "Linux Acer tablet."
