How can you right a if command using, gmdate('d-m-Y');. I have a high level of experiene in PHP but i just can't think how to say if longer than 30 days ago, from a date in that format.

Here's something to start with:

echo strtotime('-1 Month');
?>

You can also strtotime() your d-m-Y and compare the 2 timestamps.
