Are you asking about what hardware you will need to run an exchange server? That will be quite dependent on the load it will need to handle. How many users will be accessing this server? Will it just be dedicated to be an exchange server only or will you be running any other services on it.

If you have a decent enough server already in house, you could look at just running exchange inside a VM and not worry about purchasing new hardware.

With 500 users, I would assume the company already has multiple servers. That means there should be some type of standard with regards to vendor and support contract. You don't randomly pick a server and configuration from a catalog.

There are guidlines on Microsoft's site for minimum requirements and disk sizes dependent on how many users and the allowable size of the mailboxes. But you would be better off calling Dell or HP and getting some quotes from them.
