I couldn't even find a download for their manual.

ARGH!! Don't mind me. I'll get over it.

You might want to select their firewall [Internet Security ] as the product & search for trust.

I just did so, selecting Norton Internet Security
and searched on: trust

Section 3 has a 10 step blow by blow description of the steps needed.

I've given that a try, but because Norton 360 has a completely different user interface to that of Norton Internet Security 2007, many of the settings and options in that guide are not present in the software I am using.

I'm going to try and get in touch with Symantec, but if I don't have any luck with that, do you know what else may be able to solve this?

What else to do? Uninstall that piece of garbage. Total overkill and bloatware. If you are behind a router the Windows firewall is plenty sufficient along with any number of free AV programs.

I'm quite comfortable using Norton 360, so I would prefer to not uninstall it.

I have disabled the firewall, though, and yet I still don't seem to be able to share files or the printer.

Disabling will not do it. It must be configured to allow local zone transfers. RTM.

I managed to disable some of the settings in Norton 360, and that's done the trick.

That's the problem with "disabling some the steps" with Norton like this. You might as well uninstall it rather than have it improperly configured which will now give you a false sense of security.

What I did to get it to work was as follows:
  • Right-click on the Norton 360 icon in the system tray.
  • Select 'Open Tasks and Settings Window'.
  • Click 'Change Advanced Settings'.
  • Click 'Firewall Protection Settings'.
  • Click 'Firewall General Rules'.
  • Go through this list and select 'Allow' to all of the elements.
Obviously, as someone else here as mentioned, you are disabling a lot of key security items, but this was the only way I could work-out how to fix the problem.
