To be honest with you. You're better off using Windows XP at the moment. There aren't enough games out for Vista yet. Unless you're playing Halo 2. Also you might lag depending on how far away you are from the server or host. If you like in the UK, and you play a lot of US servers then there is potential lag or vise versa(spelling?). What I'm doing right now is duel booting XP and Vista. It works great because I can play Halo 2 on Vista, but also go and play the old school games on XP. Also make sure that when you're playing you don't have bittorrents on or downloading anything. Other than that I use Windows Vista Business as my Vista OS. I don't think it matters which one you have though. That shouldn't lag you.

Theres a lot of games like if u wanna play the games that came out in 2005 xp is better. But most of the games of 2006 and all games of 2007 works fine on vista. I think its the same in both vista premium and ultimate. I dont think theres any differences. Actually gaming depends on your ram, agp or graphics card and processor. but processor doesnt really matter.
