How do I do this? I can get it to go temporarily, but it sometimes reverts back to by date in the folders and it always does if I'm browsing for a file from somewhere.

Try clicking the View menu; Arrange Icons; Point to and click Auto-arrange; Repeat - View menu; Arrange Icons; Point to and click By Name.
