Is there an easy way to keep the structure but clear all data out of an Access database?

How many tables in the database?

Only 2 come to mind, both easy in a simple database and both a pain in a very complex one. For each table, you can copy and paste the table, saving the structure in the pasted table. If you wish, rename or delete the old table and name the new one with the old name - this will keep all queries, forms, etc valid.
The other way would be to open up each table, highlight all the data and delete it. I am no guru - there may be a faster way, though.

Make sure to make a backup first. I am assuming you have relationships and cascading updates/deletes setup. I always remove the relationships, delete the data from the tables - then set the relationships back up the way they were.
