I would like to connect 3 monitors with VGA plugs into a new Asus ZenBook Pro 15 laptop, model UX580GD. It has 2 USB C/Thunderbolt 3 ports, 2 USB 3.1 ports and an HDMI port. There are inexpensive VGA to USB 3 or USB type C adapters available, which I could plug into a USB C hub, but I'm not confident that would work.

    Any suggestions would be appreciated!

connect one monitor to the HDMI
and the other two to the USB Thunderbolt ports

You do not need a hub and it will only introduce problems

Okay, thank you - I will give that a try. The hub was a concern - I have a USB C hub and not everything works when connected to it.
