I know I'm showing my ignorance but what exactly (layman terms) does it mean to defrag your hard drive and how often, if at all, should you do it? defrag that is?

Defrag basically does housekeeping on your hard drive. Windows is constantly reading and writing to and from your disk. As files get erased, rewritten, and moved little pieces (fragments) of data can wind up all over the place. The more this happens, the more the hard drive has to bounce back and forth to load files.

I usually try and defrag about once a month. Run scandisc first and make sure you don't have any other programs open not even your screensaver as it will just have to keep starting over.
