DHCP/routing issues

Stepping into a pre-existing network that has multiple domains, multiple dhcp servers (hosting multiple scopes), with multiple vlans, that also has level 3 switch routing.
It is very complicated for the type of environment that it is and I am trying scale it down.

First question - The level three switch, which acts as the gateway for each vlan, has a command in it that says, "ip name-server x.x.x.x" (btw, this is a cisco unit). If was would change that ip address to another dhcp server and put those scopes on the new server would that fly??? I think it would just wanting a verification.

For any who would like to know the correct answer is adding the "ip helper-address x.x.x.x" command on the vlan interface and this will tell it to go to x.x.x.x to get its DHCP.
