dual channel memory controller

    Please could anyone help me out with the benefits of having a dual channel memory controller on a motherboard, like on the new Nforce2 boards.Im going to upgrade my pc and want to make the right choice..Also does it mean that to get the benefit of the dual channel feature that you have to install two seperate DIMMS?I know a DIMM is dual inline memory module so for example is one stick of pc2700 DDR ram already 2 memory modules in one?So by implication 2 DIMMs would occupy 2 slots on the m/board but would be like 4 memory modules? I have a suspicion that I may be a bit confused on the subject.
    I want to get a top flight board to offer some future proofing,the only demanding application I forsee is for games.
    I would like to upgrade new m/board &cpu myself if I could track down the procedure somewhere( and pitfalls to avoid) can anyone reccomend a site covering this for amateurs like me?Thanks
