how to identify the protocol

    how can it be identified that wich protocol is being used for a particular traffic.
    like most of the traffics are via http but like gmail-pop-l-google.com is using some different protocol.

    like I have the proxy server here which filters only hhtp that is configured
    I want two things some wesites or maleware sites using someother protocols inside http how it can be identified.

    2nd is I have to block chatting like yahoo,google,rediff,msn etc how we can do that

    but in case of google chat if the person logs in his account he can chat no need to install the chat software. how it can be blocked.
    but i don't want to block google mail.
