The last Windows 10 update changed my start menu, so now the "all apps" list is there and open on the first click on the start menu icon; and it took the "power" and "settings" options and turned them into icons only, no words. I'm not using the full screen start menu.
How do I get the old one back---labels on power and settings etc., all apps list not showing up unless I ask for it?

Sorry, you are just a lowly licensee of Windows 10, you don't own it. If you don't like it, then ditch it and run Linux.

Joking aside, I heard good mentions about Classic Shell. Maybe that will give you what you want.

I really don't like to add yet another layer of software---everything has consequences somewhere... I just like the way they had it before. My other two computers had updates at the same time, but they were not changed, oddly.

Oh, dear, they are 1511... I assume they will also change soon and I just have to put up with it...
    Thanks for the info!
