i want to be able to link tables in Word 2016 so that if I enter text in a particular cell in one table it automatically populates a specific cell in another? Is this possible or would I need to create thelink using Access or Excel? Not much experience with Access.

I think you're far better off doing this in Excel, since it would be a lot easier to achieve using formulae. I think as far as Word is concerned, you might have to use VBA to replicate this.

Is it possible so to create the tables in Excel and copy them over to word and just link them that way?

Stick with excel, and do the way things were designed to do.
Tables in Word were not designed to do what you want.
Just like buying a VW bug to haul sheep in.

So is it just a matter of using a formula in excel to ensure text in one cell = text in another cell and copy/paste into Word?

Here's one way to achieve what you want between Excel and Word. It can be a bit clunky at times, but it works.
