I used to have an old volcano 7 oversized heat sink and fan where you can manually control the fan speed.

yes but i got multiple side fans and i can hardly ever get in my bios b/c it's some damn trick! u have to either hold tab or press it but either way doesn't work! the screen flashes by too fast before i can press the necessary keys to access the bios D:

ok cool thanks for this junk, just which temp is the real one theirs like 10 diff temps. mainly cuz i have 1 the one that says just temp is at 126! and has a little fire infront of it... bad or not a problem?

If the temperature isn't changing, it's probably because that's an unused channel on the sensor chip. With SpeedFan, you can configure only the active ones to be displayed.
