I have looked and looked for a "reasonable" method to normalize the audio of a regular DVD after ripping.
My wife has hearing problems and when volume turned up to hear voices, the MUSIC is WAY TOO LOUD - WOW!

Is there ANY software that will normalize the volume of a DVD without going through DEMUX and then recombining etc. etc???

First look into your players audio set up. There should be a setting there which should help. It can be called a number of things, it works by limiting the dynamic range of the sound. It should make the loud parts less loud.
