Outlook and MS Exchange Server Sync?

I have both a Blackberry and a HP Jornada. I would like to sync them both to my Outlook, but only to the off line information - I don't want this info to be shared with everyone. However, when I hook up my devices and I am out of the office (not hooked up to the network) I can not sync either device. Is there a way to still have Outlook hooked up to the exchange server and load/sync my devices while offline and not have anyone see this info when I go back to my office and hook back into the network and thus the Exchange server?

Do I make that clear?!?!

Unless you are physically connected to an Exchange server you will never be able to synch your calendars. You could try something with a dial up to synch calendars.

Not even by setting up another folder or something like that? Could I just sync the data but not let or have other people see it???

You don't have to have your calendars in a public folder. Just use the personal calendar to synch to. If you need to share your local calendar set up delegates and synch at youe leisure. You can also create offline folders to update and synch whenever you want as well.

Ok so how does one create the offline calendar and what about contacts - can I do the same with that. Do I still need to be conected to sync with an offline folder?
