I am wondering if it is possible to use a scanner to scan and store (to usb or sd card) without using a computer to scan. In other words to scan on the go with a small home type printer/scanner i.e. print scan copy machine, etc.

I need to scan many photos and documents in a remote area with no internet access and don't want to bring computer/laptop. I may be able to bring a tablet to connect to the scanner if it is not possible to scan and store to usb or sd card.

    Thanks in advance.

I'd use the camera on a cellphone. You can use the camera with no wifi nor cell service. Taking a picture of photos and documents is quicker than carting along a scanner.
Just be sure to have battery packs in case the battery gets low on the cellphone. Attach a USB stick with an OTG cable and move the scans to an attached USB stick.
    Go here https://www.cnet.com/how-to/how-to-tell-if-your-android-phone-or-tablet-supports-usb-on-the-go/
to see if your cellphone supports this.

Practice at home until you feel comfortable doing this.
