So in the office we still have SBS 2003 at the moment and I want to add VPN. Problem is, it looks like I need to disable Routing and Remote Access in order to do it, and I don't want to lose everything that has already been configured.

Does anyone know of a way to enable VPN without disabling everything first, or is the best I can do just taking screenshots of each and every properties screen and hoping I'll be able to re-enter everything exactly as it was?
