If I purchase a USB bluetooth adapter for my PC, will my cell phone's bluetooth headset work on my PC as a speaker/mic?

After appropriate drivers have been installed for both your headset and the bluetooth device, sure.

Make sure that your headset can work with a PC instead of just a phone.

It's a Plantronics Voyager 510, a very popular model. How do I know if it will work as a headset on my PC? I don't see a driver on the Plantronics website. Do I need to find a driver for my specific model or just a generic bluetooth headset driver?

Bluetooth is a standard protocol. Although you will need drivers for your PC (if it doesn't have it already), but you will not need any drivers for the headset. You do need to pair the headset to the PC. That's all.
