I am running Windows 7 Pro.
My issue is when I open Explorer to view/find File & Folders in each drive, if I Minimize Explorer, when I go to Maximize, all Files & Folders are collapsed, resulting in me having to open everything up again in order to find where I was at. It's quite frustrating and time consuming.
    Any help is appreciated.
    Thank you.

Are you sure that you are minimizing the pane and not closing it?

    Yes.
I also noticed for example, if I have a folder open with photos and I'm working on them in Photoshop, then try to go back to the open file, everything is collapsed again.

I wasn't able to find people with your issue. I saw lots wanting Explorer to collapse things instead of having everything open.

I was also unable to reproduce your issue on the one Window 7 pro computer in our home.

Thank you both for your responses.
It's not a huge deal, but was hoping I could fix it.

Windows key + Tab and stop at the one you want.
