Would this be a good laptop?

Processor: 3rd gen Intel Core i7-3632QM quad-core processor (2.20GHz / 3.20GHz with Turbo Boost)
Display: 14" LED backlit touch display (1600 x 900)
Graphics: AMD Radeon HD 7670M (2GB) hybrid graphics
Hard Drive: 1TB (5400rpm)
RAM: 16GB (8GB x2) DDR3-1600Mhz

Thing's I'll be using it for are:
- Photoshop and maybe Adobe Premiere
- Playing some older offline games and maybe some newer MMOs
- Of course browsing the web for forums/email, videos/movies and such

Any gaming laptop (like the one you listed) will be adequate for what you want to do. the 16GB of RAM will come in handy for Photoshop, but the small screen might make Photoshop a bit difficult to use.

Great specifications, but I do agree with the small screen.
I think it will have a HDMI 'slot'.
So you can always buy a HDMI cable and connect it to a bigger screen :)
